Turbot: Shield of Approval

These warty green devils come from the most coveted North Sea broodstock, which of course is none other than the finest in the land. The white underbelly of these underwater coats of armour proves that they have grown up in a natural and unadulterated environment.
Farm raised in middle-of-nowhere coastal Chile, the rip-tides specific to the area provide the purest and most oxygen rich waters possible.
Since the farm guarantees that their turbot arrive at our plant less than 24 hours from harvest time, you know the animal you purchased has just left the killing field and is in a prime state of rigor mortis.
In Turkey the call the turbot a "Kalkan" meaning "shield". I had a feeling there was something medieval about this fish.

Halibut will be scarce until March. My advice? Stock up on turbot in the mean time.

Loyal readers, I know that I am usually at least mildly entertaining however today we need to have a lesson on T-Rex caviar which is really cool and therefore serious. Plus, I have writers block. Eventually I just need to send the dang email out and go eat dinner.
Let me start off by saying that you need this caviar.
"T-Rex", is here. This product is extracted from the all-mighty White Sturgeon, who's eggs are comparable to those of the most highly regarded Beluga. The sturgeon are raised in huge concrete raceways built over an 100 mile long underground lake in Yellowstone National Park. They grow for up to 15 years before they are harvested for their caviar. The volcanic soil from whence the water so springeth was deposited more than 2.1 million years ago. This soil works as a filter and an oxygenator for the water. Two different-temperature water sources flow from underground. They are manipulated to create a water temperature of 60 degrees Fahrenheit all year round.  That means you can buy this stuff in its most desirable state all year long. The colors and flavors found in T-Rex caviar are complex and rich because the fishes habitat contains river plants, fairy shrimp and mollusks which are all part of the natural diet of the White Sturgeon. In closing, this caviar is the best bang for your buck. It is super fresh all year round, it is domestic, the Little Pearl company pays their workers sustainable wages and it is harvested in a very natural way.  If you don't like this stuff, I deem you officially nuts.
