Sockeye Salmon 8/18/10

While the rest of the world is asleep, we are out scouring the seas for the finest and most delectable Wild Alaskan Sockeye Salmon:

                                                        
                                            
Did you know?

Sockeyes are the third most abundant of the species of Pacific salmon.

Pierless sockeyes are “dime bright”; i.e. they are ocean caught troll fish which are not spawning.

The succlent, bright red meat of the sockeye is prized above all other salmon meat.

The name sockeyecomes from the story of an Alaskan fisherman who punched a salmon in the eye before taking it back to his family for dinner.
Just kidding…

The name sockeye ACTUALLY comes from the anglicization of "sukkai", its name in Halkomelem, the language of the indigenous people along the lower reaches of the Fraser River.

SIDE NOTE:

Breeding-age sockeye males have a distinctive look, developing a humped back and hooked jaws filled with tiny, easily visible teeth.

Phase 1:  GAGA for SMOOTH SHARKS!

Mustelus Canis (a.k.a Dogfish, Sand Shark, Smooth)

Caught off the coast of Long Island, these sleek and wild sea beasts are both underrated and underutilized. Smooth Shark stocks are, and will continue to be, protected under Uncle Sam’s Fishery Management Plan (FMP) for 2012. They are very well managed in this proactive plan to protect their biomass index.

The meat, which we sampled both fried and sauteed in yesterday's corporate taste, is white and firm. In my opinion the texture was a little like fluke, but a thicker cut. The taste was very clean and non-fishy, like cod.

Isn’t that GREAT??!!!!

Now you may be saying to yourself:

Ok, sounds convincing, but who the $#@% wants to eat a bona fide shark?

I asked our in house shark whisperer to find out: (His name is currently undisclosed, but it rhymes with shark.)

Gabe: Shark Whisperer, will you answer a long standing and delicate question that everyone in the  industry is dying to find out?

SW: Why, sure.

Gabe:Would Lady Gaga eat smooth shark meat?

SW: Are you kidding me? ABSOLUTELY! YES, YES and YES!!!

Gabe: Why are you so enthusiastic about this question?

SW: Let me break it down for you:  Both Lady Gaga and a smooth shark have soft and supple skin. They both are nocturnal and they both party hard while staying safe.
