Hornpout Catfish 9/01/10

It's Labor Day weekend!! Which means we have only one special this week:
THE HORNPOUT CATFISH


This small catfish is a lesser known sub-species of the Catfish family (think Latoya from the Jackson family). Rarely more than 2lbs soaking wet, the firm and reddish meat is even tastier than its run-of-the-mill brethren, the channel catfish and the blue catfish.

The hornpout is a clan symbol of the Chippewa.  In their tradition, the hornpout or "wawaazisii" is one of six beings that came out of the sea to form their original clans. Honestly, it doesn’t really get any more symbolic-back-to-nature-grass-roots than that.

At 3.95/lbyou will be psyched, especially considering that we already did all the work for you. These fish come head off, skin off, bone in and about 10” in length.

In closing, if you want to be “cool” and you want to be “different” buy some hornpout and serve it to your patrons. This is New York City, people.

If you want to get ahead of the race, you better be living (and eating) on the fringe.
