Hake and Striped Bass 2/1/11

When in doubt, MAKE IT A HAKE!
Have you ever seen the face of a hake? Trust me, you don't want to. They are hideous monsters and that's why we sell them headed and gutted. They come from Massachusetts and their white flaky meat is great for soup, wrapping in bacon (honestly, what isn't good for wrapping in bacon?), etc.

What am I talking about? You know what to do, you are the chef. Hake has a bout a 70% yield and usually weigh from 7-14# per fish. It's also NOT the most expensive fish in the world so:

Stripah News:
New fishing areas for striped bass are open today in Virginia and Maryland. For the end of this week, and for many moons ahead, we will have an abundance of striped bass in house.
Breaking it down for you...
A: Striped Bass are an anadramous species (live in salt/ spawn in fresh).
B: That dude who was in charge of our country in 2007 issued an executive order for no striped bass fishing in federal waters (3 miles off shore).

D: In this day and age, stripers are not overfished. Their biomass indexes are healthy.
E: We sell line caught striped bass, which has very minimal impact on the fish's habitat.
